Old-World Style Meats

Our story is told through the individual animals that graze on our farm. They can tell you about eating healthy green pastures and sunning under the warm Alberta sun. Drinking mouthfuls of cool, clean water and taking their natural time to grow into healthy beef animals. When you eat beef raised such as these, you can taste the quality life they lived. Our role in the story is that of caretakers of the animals and land and encouraging their natural synergy.

Our beef are free range and grass finished. They are not fed animal by-products nor are antibiotics or hormones administered. They roam the lush green pastures all summer and munch on silage bales and leafy hay throughout the winter. We rotate them every few days to greener pastures in the summer. Trust us, they are happy animals!

Alberta Style Charcuterie

Charcuterie (shar-KOO-tery) is considered the French culinary creation of pork products such as sausages, salami and prosciutto. Today, the term encompasses a vast range of preparations, most of which involve salting, cooking, smoking and drying of different meats.

Our premium Alberta style air cured charcuterie is produced from 100% grass finished Alberta beef. It is produced in the old world style (by our favourite charcutier) and is truly unique. We use only the primal cuts and only process a few beef at one time. Grass fed beef is naturally leaner thus is a perfect ingredient for our charcuterie.

The ingredients for our products are simple: Beef, salt, spices, natural casing, natural smoke. There are no milk or gluten products (to act as fillers and binders), no MSG, no sugar and NO NITRITES are added as a preservative. The products are flavourful, nutritionally dense and packed with grass fed nutrients. We are pleased to present our line of premium local beef products to you.

Our Philosophy

We truly believe in raising our animals humanely. We are with them almost daily thus, they are used to people around them and we get to know some of their quirky personalities.

We use sustainable farming practices such as spreading composted manure on the pastures and moving their feeding spots throughout the winter for ‘self spreading’ fertilizer. We don’t overgraze the pastures so as to ensure a healthy food supply to the cattle and a healthy grass stand. There is marvellous synergy between the soil and animals.

Brian Jr. is a third generation farmer in Kitscoty, Alberta who raises his cattle on the same land as his father and grandfather did so many years ago. Along with his wife Rhonda Headon, they use many of the same sustainable practices used years ago, which combines to make a truly unique made in Alberta product.
