Five Stages of Pecorino:
A farm to fork, five course dinner that highlights the various avatars of sheep. Chef Addie Raghavan will incorporate interesting preparations with exciting flavour combinations using locally sourced and foraged ingredients.

La Bianca Snack: Wood-fired warmed, wild saskatoon berry compote, pain a l’ancienne bread

Young Pecorino & Greens – Seasonal veggies and greens, spring pecorino.

Fresco Ravioli – Garden tarragon, pink peppercorn, lemon zest, black salt, olive oil, Fresco.

Old Pecorino Pavé – Potatoes, bagna cauda.

Lamb & Whey – Whey-braised leg of lamb, steel-cut oats risotto

Raw Milk Panna Cotta – Morning’s sheep milk, dark chocolate, candied orange peel.

Includes 3 glasses of wine with the meal.  Wine and beer will be available for purchase as well.

6:30 pm cocktails
7 pm supper
